A hawker centre is an open-air food hall where each stall cooks one thing, often for decades. This is how Singapore eats. Find a seat first, note your table number, then queue where the locals queue. Stalls keep their own hours and rest days, so have a second choice ready.

💡 Go at 11am before the office crowd. A tissue packet on a seat means it is taken; that is the law here.

A cast-iron food hall in the middle of the financial district, open all night. Satay smoke outside, eighty-odd stalls inside.
💡 Not every stall trades overnight. Satay Street runs in the evening; go before midnight for the full line-up.
3. Chinatown Complex Food Centre

A maze of several hundred stalls on the second floor, above a wet market. Claypot rice, soya sauce chicken, even craft beer.
💡 It is easy to get lost, so photograph your stall's unit number. Many stalls close by mid-afternoon; lunch is safest.

💡 Go at 11:15 or after 13:30 on a weekday; noon is a scrum. It is very quiet at night and on Sundays.
5. Hong Lim Market & Food Centre

💡 Walk both floors before you pick. Come before noon, because the popular stalls sell out early.
6. Tiong Bahru Market

Wet market downstairs, an airy food centre upstairs, in the city's prettiest old housing estate. Chwee kueh is the classic here.
💡 This is a morning place. Arrive by 09:00, eat, then walk the Art Deco blocks around it before the heat sets in.
7. Tekka Centre

💡 Come for breakfast or lunch; popular stalls sell out by mid-afternoon. Bring cash and an appetite.
8. Golden Mile Food Centre

A blocky 1970s centre on Beach Road with stalls on two levels and army surplus shops on top. A short walk from Kampong Glam.
💡 Check the basement level as well as the ground floor; plenty of people miss it. Lunch is the lively hour.
9. Newton Food Centre

Open-air tables in a ring of barbecue seafood stalls, busiest after dark. It had a starring role in Crazy Rich Asians.
💡 Seafood is sold by weight here, so agree the price before the cooking starts. Come after 19:00.
10. Zion Riverside Food Centre

One compact row of stalls by the Singapore River, across from Great World. Small, but people cross town for a few of them.
💡 Easy to pair with a river walk to Robertson Quay. Have a backup stall in mind, as each keeps its own rest day.
11. ABC Brickworks Market & Food Centre

A big, well-loved neighbourhood centre with barely a tourist in it. The name comes from the brewery that once stood nearby.
💡 Good for dinner, when the claypot and barbecue stalls are going. Take a taxi; it is a long walk from the MRT.
12. Adam Road Food Centre

A small round centre known for Malay and Indian Muslim food. People queue for the nasi lemak and argue over which stall is best.
💡 Walk here after the Botanic Gardens; it is about ten minutes from the Bukit Timah gate. Mornings are best.
13. Old Airport Road Food Centre

A huge centre named for the old Kallang Airport nearby. Hokkien mee, lor mee, rojak, satay: every classic has a contender here.
💡 Come hungry with friends and order from four or five stalls. Stalls pick their own rest days, so keep a second choice.
14. Geylang Serai Market

A big market under a kampong-style roof, with nasi padang, mee rebus and kueh upstairs and spices and textiles below.
💡 Go for a late breakfast or lunch and point at what looks good in the nasi padang trays. Bring cash.
15. Chomp Chomp Food Centre

A small, smoky night-time centre in a quiet housing estate. Hokkien mee, barbecue stingray and giant mugs of sugarcane juice.
💡 It only really comes alive in the evening. Seats are scarce, so send one person to hold a table while the rest order.
16. Bedok 85 (Fengshan Food Centre)

Known to everyone simply as Bedok 85. The east side comes here for supper, above all for bowls of soupy bak chor mee.
💡 This is an evening and supper spot, so do not turn up for lunch. Two rival noodle stalls sit near each other; try both.
17. East Coast Lagoon Food Village

The hawker centre on the beach. Thatched huts, satay smoke and a sea breeze, right on the East Coast Park cycle path.
💡 Come at sunset after a bike ride. Order satay, barbecue chicken wings and a sugarcane juice, then watch the ships.
18. Changi Village Hawker Centre

A breezy centre at the sleepy eastern tip of the island, famous for nasi lemak queues that never seem to end.
💡 Eat here before or after Pulau Ubin; the ferry terminal is a short walk. Several stalls sell the nasi lemak.
